Turkey is over-rated.
Being Italian, my family has always done an Italian dish and had a turkey in addition to. But time has gone by, the torch has been passed - the Thanksgiving dinner has been at my home for the last few years. My wife is vegetarian. I’m not. I still think turkey is over-rated. My baked ziti was a huge hit last year. (no left-overs for me the next day) So I’m going to make two trays this year. Using a secret recipe brought from the Old Country (Sicily) by my Great Grandmother. I used to watch and help all my grand-parents cook. I was really young and didn’t appreciate it enough then, but realize now it’s where i learned my love for cooking. One thing I’m still learning is to be patient in the kitchen. I remember my GGM taking such great care and pride. The hours in the kitchen - taking no short-cuts. I admit I do take the short-cuts here and there but, I try to improve each time. Relax and enjoy..she used to say in Italian.
